What is freeze-drying?

Freeze-drying is a dehydration process that involves freezing the food, then using a small amount of heat and a vacuum to remove the water via sublimation.  You can learn more here!

Can't I just put candy in the freezer and then into the dryer like Tik Tok said?

Unfortunately, no.  You can put candy in your freezer, then in the dryer, but it will not give you freeze-dried candy.

If you are looking to make freeze-dried candy yourself, but don't want an entire freeze-dryer, you can make them in a vacuum oven!  Check out the "Freeze-Dried Candy" section on our Freeze-Drying page for more information.

How much liquid nitrogen goes into each candy?

None, our freeze-drying process doesn't use liquid nitrogen at all.  That doesn't sound very appetizing.
